Chicken and Vegetable Salad ingredients. • 2 cooked and shredded chicken breasts (you can use leftover roasted chicken) • 1 cup cherry tomatoes, halved. • 1 cucumber, sliced. • 1/2 red onion, finely chopped. • 2 cups mixed greens (lettuce, spinach, arugula, etc.) • Juice of 1 lemon • 2 tablespoons extra virgin olive oil • Salt and pepper to taste recipe. * In a large bowl, combine the shredded chicken breasts, cherry tomatoes, cucumber, red onion, and mixed greens. * In a small bowl, whisk together the lemon juice, extra virgin olive oil, salt, and pepper to make the dressing. * Pour the dressing over the chicken and vegetable mixture and toss well to combine all the ingredients. * Serve and enjoy your chicken and vegetable salad!
